Soph’s easy vanilla yoghurt

  • 60 g raw sugar, 30g per batch (can alter or omit)
  • 2 litres long life full cream milk, 1L per batch
  • 240 g milk powder, 120g per batch
  • 120 g Pot set Yoghurt, (I use Jalna brand )

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. To make your first batch,
    ☆ Add 30g of raw sugar to the bowl & mill on speed 9 for 10 seconds-scrape down sides and lid
    ☆ Add 120g of milk powder, 120g of pot set yoghurt, 15g of vanilla essence & 1L of long life full cream milk & cook - 10 minutes/40°/speed 3
    ☆ TM6 option- switch to Fermentation mode and ferment for 6 hours/40°
    ☆ TM5 option- pour yoghurt mixture into your thermoserver or other insulated container and wrap up in a black or large towel and leave on the bench undisturbed for 10 hours
    ☆ Refrigerate once processing time is over for a minimum of 2 hours.


    For the 2nd batch of yoghurt
    ☆ Keep aside 120g of your first batch of yoghurt to use as a starter for your 2nd batch.

    ☆ Repeat the same method as the first batch and just use the reserved yoghurt (120g) instead of buying store bought yoghurt again.

Tip

You can add puréed fruit to this yoghurt mixture after it's been cooked. but it will make the contents runny.
