Ingredients

Base

  • 1 packages biscuit of choice, Choc Ripple
  • 80 grams Butter

Filling

  • 280 grams white chocolate, Chocolate Melts
  • 500 grams cream cheese, Philadelphia
  • 50 grams sugar, Caster
  • 1 teaspoons Vanilla Paste
  • 350 grams cream, Whipping
  • 200 grams Fresh strawberries, Washed and hulled
  • 1 packages jelly powder, Strawberry preferred but you can use any fruity flavour
  • --- water, 1/4 cup hot water

Recipe's preparation

    Biscuit Base
  1. Cut butter into cubes add to the thermo at 3mins 60* speed 1.
  2. Add biscuits and set 5 seconds speed 6, scrape down the sides and repeat if needed.
  3. Empty into a prepared spring pan of your choice. No need to wash the thermy, just continue onto the next step.
  4. Cheesecake Filling
  5. Add the chocolate and melt 3 mins at 60* speed 1 - While this is melting add your jelly powder to a 1/4 cup of hot water and mix until the powder has desolved and set aside.
  6. Scrape down the sides then add the two blocks of cream cheese, sugar and vanilla then blend 20 seconds speed 5
  7. Scrape down the sides and add the cream and blend 30 seconds speed 7
  8. Add the strawberries and blend 15 seconds speed 5
  9. Scrape down the sides then add the jelly mix through the hole while it is mixing for 10 seconds speed 4
  10. Add this mixture to your prepared biscuit base and put into your fridge overnight. The mix may come very close to the top of your spring pan.

Alternatively you can change the strawberries for any other type of berry, or do a mix of berries to change the flavours and texture.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).
