Sugar-free Salted Peanut Butter Fudge
- 120 g coconut oil
- 80 g Maple Fibre Syrup, Nothing Naughty Brand
- 1 level teaspoons vanilla extract
- 1 pinches sea salt flakes
- 60 g coconut cream, thick
- 350 g Natural Peanut Butter, smooth

Recipe's preparation
- Line a slice or loaf tin with baking paper and set aside. (I actually use a glass storage container from kmart)
- Place coconut oil into mixing bowl and melt 2 min/80°C/speed 2.
- Add maple fibre syrup (or other sticky sweetener), vanilla, sea salt, coconut cream and peanut butter and combine 30 sec/0°C/speed 3
- Pour into prepared tin and smooth down the mixture with the back of a fork and place in the fridge until set (at least two hours). Optional-Choc topping. You can melt 50g chocolate and 2 tsp coconut oil in your thermomix and pour over the top if you like. I have made both versions regularly and they are equally as yum!
