For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation
- Place raw Sugar into a dry thermo machine and mill for 30 seconds, speed 7, MC on, scrape mixer bowl down.
- Add milk, Cream and Egg yolks to mixer bowl, cook for 7 minutes, 70 degrees, speed 3, MC on, as the custard is cooking and blades spinning add the teaspoon of vanilla bean extract.
- Let custard cool in fridge for 1hr
- Once custard is cool place the mixture into ice cream churning machine until ready, approximately 40 minutes depending on your machine.
- Then place Gelato into a Tovolo ice crew container and place into the freezer for a minimum of 4 hours and enjoy!
