  • 100 g Frozen Coconut Milk Cubes
  • 40 g raw sugar
  • 20 g freshly squeezed lemon juice, around 1/2 lemon

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Creamy pineapple and mango soft serve
  1. 1. Mill the raw sugar for 5 seconds speed 10.

    2. Insert butterfly whisk add the egg white leave off the measuring cup and cook - 2 min/temp 65/speed 4

    3. Scrape down sides of bowl and (still no measuring cup) for
    1 min/temp65/speed 4

    4. Take out butterfly whisk then add the frozen fruit, coconut milk, lemon juice and keeping the MC off the lid for blend -
    speed 9/45 sec - and stir with the tmx spatula through the hole in the lid to help fruit mix thru.

    5. Re-insert butterfly whisk - mix 1min/speed 4 - then remove butterfly whisk and serve immediatley or freeze.

Tip

Make sure to plan ahead by freezing the fruit and coconut milk overnight or for at least 6 hours. If using fresh mango and it is very ripe and mushy, cut into pieces and freeze in an ice cube tray.
