Creamy Coconut Milk

Coconut Milk Ingredients

  • 200 g dessicated coconut
  • 25 g brown rice flour
  • 1 fresh date,pitted
  • 1.2 litres water

Recipe's preparation

    Method
  1. Place all ingredients in TM Closed lid and cook for 8mins/100 degrees/speed 4.

  2. Blitz for 30 sec/speed 9. 

  3. Strain through a nut bag/jelly bag/muslin cloth. You can use tongs to help squeeze out the last of the milk from the pulp or wait until it cools enough to handle and do it by hand (my preferred method).

Tip

This recipe produces a lovely creamy coconut milk that tastes a lot like the store bought ones but without the sugars, guar gum etc. 

It's perfect for using in meals, over your cereal or even as a tasty drink. 

 

This is also a great recipe if you're trying to reduce your shopping costs. I find I can make this milk for less than $1/L which is much cheaper than store bought coconut milk.

    This is really like store bought coconut milk. Tastes great. Forogot to blitz it so I mad e it again with 600ml of water and therefore stretched out the servings. Used agave syrup just a tablespoon though and it was fine. Thanks for sharing

    hi Shannon, the date just sweetens it a little. When I was playing with recipes my husband was saying that it was nice but not as sweet as the one in the carton. So I added a date and he said it was perfect.
