- 240 g raw sugar
- 65 g homemade vanilla sugar
- 7 cloves whole cloves
- 400 g milk powder, skim or whole
- 6 heaped tsp ground ginger
- 4 heaped tsp cardamom seeds, or ground cardamon
- 25 g cinnamon, Ceylon
- 2 heaped tsp ground nutmeg

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Put in all sugar, cloves and in bowl and mill 20 seconds speed 10
- scrape down sides
- add all other ingredients and mill 60 seconds speed 10
- Store in an air tight container
- To drink add 2 heaped teaspoons to hot milk or hot water or you could add a shot of coffee with the chai mix and hot milk to make a Dirty Chai
