Kola Nut Cordial

Ingredients

Cordial

  • Zest of 2 oranges
  • Zest of 2 limes
  • Zest of 2 lemons
  • 1 whole nutmeg
  • 1 whole cinnamon quill
  • 1 star anise
  • 1 vanilla bean pod
  • 1 tsp dried lavender flowers
  • 3 centimetre piece of ginger, peeled and sliced
  • 2 tsp Kola nut powder
  • Few fresh mint leaves
  • 1/2 tsp sea salt
  • 1/2 tsp citric acid
  • 450 g raw sugar
  • 50 g organic molasses
  • 400 g water

Recipe's preparation

    Method
  1. Place all ingredients into mixing bowl and cook 10 min/80C/Counter-clockwise operation/speed 1

  2. Pour mixture into ThermoServer and leave the flavours to meld whilst cooling

    Once cooled, strain through basket and discard solids

  3. Dilute with soda water and ice to taste

    Add lemon slices to taste

  4. Reserve remaining cordial in an airtight bottle in the fridge until further use
