Lamington Cocktail

  • 60 g vodka, Vanilla Flavoured (see tips)
  • 60 g liqueur, Brookie's Macadamia & Wattleseed
  • 60 g coconut milk, (tinned)
  • 30 g Rosella Syrup, My Dilly Bag
  • 1 pinches Wattleseed, roasted & ground

Garnishes

  • 2 piece Rosella or Wild Hibiscus flowers, in syrup, garnish

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Prepare your glasses
  1. Put chocolate sauce & desiccated coconut on 2 separate saucers.
    Dip each glass rim in the chocolate sauce then into the coconut. Set aside
    (Martini glasses work well)
  2. Thread a rosella flower onto a bamboo skewer & set aside for serving
  3. Making the cocktail
  4. Add to jug:
    60g Vanilla Vodka, 60g Brookie's Macadamia Liqueur, 60g tinned coconut milk, 30g My Dilly Bag Rosella Syrup, pinch roasted & ground wattleseed, and ice
  5. Blend 30 seconds/Speed 9. Scrape down sides of mixing bowl.
  6. If drink not blended to your liking, blend for another 10 seconds/Speed 9 then pour into prepared glasses.
  7. Top glass with skewered rosella flower. Can substitute strawberry or maraschino cherry for lovely red garnish
