If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation
Add sugar, water and lemon juice to "Closed lid" .
Cook for 7.5 mins on Varoma on Speed 2
Cook for another 10 minutes on 70 degrees Speed 2 with MC off
Add citric acid and mix for 10 seconds on Spd 3
Pour into sterilised jars, and refridgerate for up to a month

If you use rapadura sugar like me, your cordial will be very 'caramel' in colour

Nicely tart & not too sweet. I brought it up to boiling in the thermomix before adding the citric acid (approx another 3 minutes) & it hasn't turned brown at luke warm temp so hopefully it won't. Thinking of making some for presents at Christmas. Thanks for this recipe.

Thank you so much for this quick, easy and delicious cordial concentrate. It was the perfect combination of sweet and sour. I ran out of lemons so used 2 oranges in the mix.
As an added point of interest, I tasted it as soon as I made it so it was warm after diluting with water. It was heaven on my sore throat so I think I will whip this recipe up whenever anyone is feeling a bit off and serve it warm! Lovely.

This got a big thumbs up from the family! I'd suggest squeezing your lemons first, and adjusting the other ingredients accordingly - 500gm of lemon juice was 12 very juicy lemons (a great idea when you have more than you know what to do with)

Try it and see - its a natural preservative and adds to the acidity - but with lemon already in the mix it may not make much difference. You could freeze the concentrate in ice cubes and just add to water when needed
