Ingredients

  • 100 g raw sugar, or more, to taste
  • 10 Limes
  • 1/2 teaspoon lime rind
  • 2 cups iced water
  • 12 cubes ice
  • 300 g ice, for serving

Recipe's preparation

  1. Place the iceblocks to be crushed into the TMX bowl and blitz for 10 seconds on speed 10.  Transfer to Thermoserver.

    Peel a little rind off a lime with the vegetable peeler and put into TMX bowl.  Continue to peel nine of the limes and discard rest of rind.  Peel off all white part (pith) as this is bitter.  Roughly chop and deseed all of the limes except the one to be used for garnish.  Set pulp aside.

    Add sugar to bowl and mill with lime rind  for 25 seconds on speed 10.  Scrape down.

    Place deseeded lime pulp, water and ice into the TMX bowl with the pureed lime rind and sugar- combine for 15 seconds at speed 8. 

    Fill a jug half-full with the reserved crushed ice. 

    Strain the juice with the simmering basket then add the limeade to the serving jug or punchbowl. 

    Garnish with thin slices of the last lime.
