  • 250 g lemon juice, Roughly 3 lemons
  • 1500 g water, Enough to cover the barley
  • --- Zest of 2 lemons
  • 200 g sugar, I use raw sugar

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Rinse pearl barley and place in bowl, add water and lemon zest. 10min, varoma, sp1

    2. Drain water through simmer basket discarding barley and zest. Put liquid back into bowl. Add sugar and lemon juice.
    10min, 80 degrees, sp 1

    3. Pour cordial into warm sterilised bottle, store in fridge for up to two weeks. I like to Serve one part cordial to two parts water or soda.

Tip

During step 1 add 4 slices of ginger to make a lemon-ginger barley cordial.

Also nice served hot hot with a dash of honey to sooth the winter blues.

    In the 10 minutes on Verona setting my pearl barley had only been at a cooking temperature for 2 - 3 minutes, so it was still raw. So I gave it another 5, still wasn't cooked. So I gave it another 5. The pearl barley was softening and beginning to release into the water. I strained off the pearl barley and lemon rind and added the sugar and then cooked the lemon water for 10 more minutes - I don't understsand why that had to happen. It make lemon cordial that had pearl barley passed through it - I don't understand what I did wrong. Was I meant to cook the pearl barley in the basket - there is mention of adding enough water to cover the barley. The barley was at finger depth in the bottom of the bowl, 300 ml would have covered the barley. As you can tell, I'm confused. It tastes ok, what wouldn't taste ok with 200 grams of sugar in it 🤷‍♀️
