- 120 grams Basmati rice (I use brown)
- 1 brown onion, medium
- 6 sprigs parsley
- 400 gram tinned pink salmon, drained
- 2 eggs
- 50 grams sour cream or natural yoghurt
- 200 grams Frozen peas and corn
- 1 tsp paprika
- 1 tsp seeded mustard
- olive oil, for frying
- salt, to taste

Recipe's preparation
Ensure TM bowl is dry (spin blades and wipe excess water from bowl).
Place rice in TM bowl and mill for 3 minutes, speed 9. Set aside.
Place onion and parsley in TM bowl. Chop for 5 seconds, speed 5
Add salmon, eggs, cream (or yoghurt), peas and corn, paprika, mustard, salt and rice flour.
Mix for 10 seconds, speed 3.
Heat oil in fry pan. Place 10 portions of the mix in the frying pan and flatten with a spatula. Turn when golden brown and cook the other side.
The rice flour in the patties eliminates the need to roll and coat the patties so they are quick and easy to prepare and very quick to cook.
Serve with a salad of choice and mashed potato made in your Thermomix.
I also serve with Thermomix mayonnaise or tartare sauce using the TMX mayo as a base.

Tip
These are great for a meal. I work on 2 patties per person.
They are also great as finger food. I use a small icecream scoop to make balls I either fry in oil in the frypan or bake in the oven with olive oil.
The large patties can also be cooked in the oven.

Fabulous!! We were supposed
Fabulous!! We were supposed to go out for dinner tonight (Good Friday) but when plans fell through I was left cooking dinner for 5 with some tinned salmon :O I added some zuchinni and used fresh corn, used corriander instead of parsley and cashew cream as we're dairy free. The result? EMPTY plates from the children, my elderly mother, AND the man of the house. Now THAT is an Easter miracle

So quick and easy!! I love salmon patties but always get put off by the rolling mess! These were great - I used shallots instead of onion and coridander in place of parsley and had no sour cream so used some cream cheese and bit of coconut milk to moisten it up - mmmmmm Thanks!

These were Ok. The flavour
These were Ok. The flavour was a bit dull as was the texture, although this turned out to be a plus for us because my two year old doesn't like strong fishy flavours. I cooked mine using the spray canola oil and I'm not sure if this contributed to the dryness? Next time I'll try the olive oil and see how that goes. Thanks for sharing!

Hi Loughill, I have read that chia seeds blitzed to a powder and soaked in liquid are a good substitute for eggs as a binding agent (becomes gel like) you could also try potato flour or even cooked and mashed pumpkin or sweet potato. Tapioca flour is another to consider. You may have to adjust the amount of liquid needed to achieve the right consistency depending on what you choose
