Seafood Fettucine Marinara

Seafood Mixture

  • 100 g Parmesan cheese, grated or shaved to taste
  • 1 clove garlic
  • 1 onion, small
  • 1 red chilli, de-seeded
  • 1 bunch parsley
  • 30 g olive oil
  • 400 g tomatoes canned
  • 100 g white wine
  • salt & pepper
  • 1 tsp dried oregano, basil, thyme, marjoram
  • 400 g Marinara Mix
  • 400 g Fettucine, dried, snapped in half

Recipe's preparation

  1. 1. Pre-grate Parmesan if being used

    2. Place garlic, onion, chilli and parsley into TM bowl and chop for 5 seconds on speed 7.

    3. Scrape down sides of bowl with spatula.  Add oil and sauté for 2 minutes at 100°C on speed 1.

    4. Add tomatoes, wine, seasoning, extra herbs, salt and pepper to taste and cook for 20 minutes at 100°C on Counter-clockwise operation + Gentle stir settingon speed 1 until thickened.

    5. Start cooking fettucine separately as required

    6. Add the seafood to TM and cook for 3-5 minutes at 100°C on Counter-clockwise operation + Gentle stir setting speed 1

    7. If  more fluid is needed, add some water and wine 50:50

    8. Pour over fettucine and garnish with grated Parmesan

The Fettucine can be added before step 5.  If so, make sure it is in smaller pieces, and keep a watch on it - it will tend to block the blade or not cook through completely.
