kale chicken stirfry

Ingredients

kale stirfry

  • 1 chicken breast, i used one large one approx 300g
  • 1bunch kale sliced thinly, about 200g
  • 1 red onion
  • 1tbs olive oil, use oil you prefer

sauce

  • 3tbs nutbutter, i used almond but peanut butter is fine
  • 1tbs Raw Honey
  • 1tbs stock paste
  • 2tsp soy sauce, to taste

topping

  • 1/2cup crushed peanuts or tst sesame seeds, to sprinkle on top

Recipe's preparation

    sauce
  1. put all in jug and mix for 5secs/speed3 till combined transfer to small dish

     

     

  2. cut  frozen chicken breasts into cubes see picture,put in jug and turbo for 2 secs scrape down you do not want mush!

     

     

  3. chop red onion into 1/4 and put in jug chop 3sec speed 4 scrape down

     

    ,add oil and cook 3mins/veroma/speed 2,addd mince and cook 8-10mins veroma/speed2/rev

     

     add kale push down with spatula as it cooks 100/speed2/rev till combined ,add sauce,use spatula to give good stir through

     

    serve with steamed rice or rice noodles

Tip

I am trying to like kaletmrc_emoticons.)) this recipe is yummy,i use a tsp of stock as im trying to reduce salt you can add to taste

    Cooked this tonight. A lovely quick, tasty meal. Only problem was, my chicken went mushy as step 2 did not say to remove the chicken, before adding and chopping the onion. Makes sense now!
