Chicken and Chorizo Hotpot

Ingredients

CHICKEN & CHORIZO HOTPOT

  • bunch Parsley (1/3 cup approx)
  • 1 brown onion, halved
  • 2 cloves garlic
  • 1 Chorizo Sausage, thin sliced
  • 20 grams olive oil
  • 2 teaspoons smoked paprika
  • 750 grams Chicken Breast, diced 3-4 cms
  • 1 x 400 grams tin chopped tomatoes
  • 150 grams water
  • 1 tablespoon tomato paste
  • 1 tablespoon EDC Vegetable Stock
  • 1 Red Capsicum, thinly sliced into strips
  • 100 grams Mixed Pitted Olives
  • Salt & pepper to taste

Recipe's preparation

  1. Place Parsley into TM bowl and chop 3 secs, speed6.  Set aside.

     

    Add Garlic and Onion to TM bowl and chop 3 secs, speed 7. Scrape down sides of bowl.

     

    Add Chorizo and Olive Oil and cook varoma, 5 mins,Counter-clockwise operation, speed soft.

     

    Add Paprika to Chorizo and continue to cook varoma, 1 min, Counter-clockwise operation, speed soft.

     

    Add Tin Tomatoes, Water, Tomato Paste, EDC Vegetable Stock, Capsicum and Olives to TM Bowl.  Gently stir TM bowl ingredients.   Place and evenly spread diced Chicken onto top Varoma tray.  Place Varoma into position and cook varoma, 17 - 20 minutes, Counter-clockwise operation, speed soft or until Chicken is cooked through.

     

    Add Chicken to Chorizo mix in TM bowl.  Gently stir and cook 100 degrees, 20 mins, Counter-clockwise operation, speed soft.

     

    Stir in Parsley, Salt and Pepper to taste.

     

    Set aside meal in thermoserver and serve with crusty bread and / or mashed potato as in the everyday cookbook.

    Cooked this tonight. Very similar to a fish recipe I cook, not thermo.
    I used about 509grams of chicken, so I used about 1 1/2 chorizo sausages.
    i omitted the olives as one of my diners doesn't like them.
    As I had to go out, I made this in advance by three hours, lined the thermo saver with spinach and put the hot pot on top. I forgot the salr and pepper - wasn't needed.
    thankyou for posting - no flavour has been lost in this conversion.

    This was amazing! I added two chorizos and had roast potatoes and a garden salad yum! I did find it a little salty so will have to find a way to reduce the salt without reducing the flavor. Will be making again for sure!

    Delish and will certainly make again! - although I did make a few changes: added spring onions with the parsley, used 2 chorizos, cooked it with chicken thigh in the jug (as I had already thrown it in there- oops) and added spinach and broccoli.

    I have one VERY happy hubby.  I served it with cous cous and also added 2 x Chorizo and didn't put any olives in as he hates them.  He said it is the best meal he has had from the Thermie so far. YAY!!! tmrc_emoticons.)

    I didn't have enough parsley so added 1/2 bunch of coriander.  I also added an extra chorizo as they needed to be cooked.   It was very tasty.   Thank you.    tmrc_emoticons.p
