Gluten Free Pizza Base

Ingredients

Pizza Dough

  • 3/4 cup warm water
  • 2 tsp chia seeds
  • 280 grams FG Roberts GF Plan Flour
  • 3/4 tsp salt
  • 1 tbsp dry yeast
  • 3 tbsp olive oil
  • Fine polenta, for sprinking on trays
  • Olive Oli, for brushing on trays

Recipe's preparation

  1. In separate jug mix chia seeds with warm water and let sit for approximately 5 minutes

  2. In the Thermomix add flour, salt and yeast and mix for 5 seconds on speed 7
    Add water, chia seeds and olive oil
    Mix 10 seconds on speed 8, then scrape down the bowl and then mix for 2 minutes on interval speed
    The texture is very soft but manageable and can be easily rolled between two sheets of baking paper.

    Divide mixture in half and roll into two pizza bases

  3. Brush olive oil on pizza trays and sprinkle with polenta

     

    Lay dough on the tray and cover with oiled glad wrap and let sit for aprox 30 mins before adding toppings.


    It makes two 30cm pizzas


    **If you prefer a firmer texture, similar to dough, as an alternative I have used 2 teaspoons of xanthan powder instead of the chia seeds, and I add the xanthium in with the dry ingredients.

     

    ***I have tried other flours but this one seems to produce a good texture.

    Thank you for this recipe. The proportions are perfect, I used my own method for the actual rise. Delicious flavour and the gluten eating people didn't even notice the difference.

    i have never ever had a gf dough I could treat the same as normal pizza dough. This wasn't sticky at all.
    and I replaced chia with 1xegg then made up liquid to just over 3/4 cup. Used Aldi gf flour. Perfect.

    Excellent Gf base! SO QUICK AND EASY. Thanks for the xanthan gum tip. I ended up using the chia seeds as well as half a teaspoon of xanthan gum as I do prefer a little harder bases. It came out thin and crispy style and held all the ingredients on top without becoming soggy/soft or falling apart like other bases I've tried. Even my non-gf partner enjoyed it. Thanks!

    I tried this with the xanthan gum - I was pretty worried at first as the dough came out very oily. It was hard to roll out properly so I just pressed it out directly onto the tray. It cooked up better than I thought it would, and better than my previous attempts with other recipes. My husband and kids gave it the thumbs up, so that it good enough for me!

    Just make sure you never put salt ontop of yeast- it will kill it and it wont do anything at all in terms of rising!
