Sweet Potato and Bacon Frittata

  • oil, for greasing baking dish
  • 75 grams Parmasen Cheese, cut into cubes
  • 1 zucchini, small OR half large
  • 400 g sweet potato, peeled and cut into 2cm cubes
  • 500 grams water
  • .5 red capsicum, cut into 1cm x 2cm stips
  • 125 grams bacon, roughly cut and fat trimmed
  • 7 eggs
  • Salt and pepper, to season

Recipe's preparation

    Frittata
  1. Pre heat oven to 160 fan forced or 180 conventional


    Grease a 25cm pie dish


     


     

  2. 1. Place paramsen in mixing bowl and grate for 7secs/speed 9 set aside.


     


    2. Place rougly cut zucchinni in mixing bowl and chop 3-5secs/speed 5 set aside.


     


    3. Add water to mixing bowl and place sweet potato into basket.  Steam for 10mins/Varoma/speed2.


     


    4. While that is cooking oven bake capsicum for 10mins/160 degrees fan forced 180 degrees conventional. Or until cooked. Alternatively add to next step for steamed capsicum.


     


    5. Leaving sweet potato in basket, place zucchini and bacon into Varoma tray and cook for 5mins/Varoma/speed 2.  OR until pumpkin is cooked. 


     


    6. Set zuchinni aside.  Place Sweet Potato and Baked Capsicum in bottom of 25cm oiled baking dish. 


     


    7. Place eggs into mixing bowl blend 3secs/speed 6.


     


    8. Add Parmasen, zucchini and salt and pepper to egg blend 5secs/speed 4


     


    9. Pour egg mixture over Sweet potato and Capsicum. Bake in moderate oven (160 fan forced 180 conventional) for 25-30mins. 


     


    10.  Slice and serve with fresh garden salad.

This is super easy to do a Vegetarian version, simply leave out the bacon.

    I was a little confused for about 3 seconds when I read step 5 where it said pumpkin instead of sweet potato, I also didn't find when your supposed to place bacon into dish. Bacon isn't mentioned after step 5.

    I hardly used the thermomix, but used this recipe as a base. Baked the sweet potato and also the capsicum. Cooked the bacon in the fry pan and also made some caremelised onion in the fry pan. Grated the zuchini. It was a yummy meal. Thank you.

    Very tasty. But the instructions have not been proof read and are not complete. I omitted the parmesan to make it dairy free. Cooking time for me was much longer... almost an hour to get it cooked through.

    I loved this recipe, I didn't cook the zucchini and steamed the sweet pototo, bacon and capscium.  Mine needed more bake time this will be a make again. Thank you for sharing your recipe.

    Thanks for recipe. I baked this today and looks and tastes fabulous. I omitted the capsicum, cooked the bacon and zucchinis on top of sweet potato in basket and sliced up left over zucchini and mixed through at the end. Yum and healthy.

    Tasty dish! I followed others suggestions. I omittted capsicum only because my kids don't like it. Instead of steaming the zucchini I grated it up and just added it to the egg mixture prior to going into the oven. I also sauté some onion, garlic and bacon as well to add to egg mixture

    My husband and I loved this recipe. I added some onion and garlic and sautéed it along with the chopped bacon and grated zuccini at beginning before steaming the sweet potato. Worked out wonderfully, will definately be making again!

    Quick, easy and yummy. I took others' advice and didn't steam the zucchini and I too substituted roasted tomatoes for the capsicum as I didn't have any in the fridge. You might have to add a reference to the bacon in step 8 - I luckily found it in my Varoma tray as I was tidying/cleaning up very shortly after putting my baking dish in the oven!

    This is a great 'go to recipe'. I left out the capsicum and used sliced egg plant instead without the cooking process for this section. Just used what I had on hand tmrc_emoticons.) I proberly wouldn't bother steaming the zucchini next time. Great dish. Thanks for adding.
