Traditional Tomato Sugo

Ingredients

SAUCE

  • 1 onion brown
  • 2 cloves garlic
  • 1 bunch fresh parsley
  • 50 grams olive oil
  • 950-960 grams Cubed beef, (chuck steak, stewing steak, casserole steak)
  • 700 grams tomato passata, Bottled pureed italian tomatoes, can purchase at Woolworths etc..
  • 2 tablespoons tomato paste
  • 100 grams water

Recipe's preparation

    SAUCE
  1. Place onion, garlic & parsley into TM bowl and chop for 4 seconds on speed 7. Cook 3mins varoma, reverse speed 1. 

  2. Add oil,  beef and salt and cook for 10 minutes at Varoma temperature on Counter-clockwise operationGentle stir setting , placing a paper towel over the lid, I keep the measuring cup just to the side holding the paper towel in place.

  3. Add tomato passata, 100g water (I add it to the original passata bottle, swish it around, then place in the thermomix as this gets all the sauce that has stuck to the side of the bottle)2 heaped tablespoons of tomato paste, more salt if needed.

     

  4. Cook for 50-60mins 100 degrees on Counter-clockwise operationGentle stir setting reverse speed soft.

Tip

This is the traditional 'sugo' your Nonna use to make. Cooking it for 50-60mins ensures the meat is oh-so-tender. This makes a rich tomato sauce that can be frozen and easily defrosted for a quick mid-week meal. You can cook the sauce for less time but the meat will more than likely be rather tough. This is VERY hot when it comes out of the Thermomix so allow it to cool. Serve with your favourite pasta.
