Zucchini, Corn and Coriander Pikelets

  • 150 g self-raising flour
  • 1/4 teaspoon bicarbonate soda
  • 3/4 cup milk
  • 1 egg, lightly beaten
  • 310 g corn kernels, rinsed & drained
  • 1 zucchini, quartered
  • 3 coriander leaves, (I used perennial coriander which is long leafed, I cut the centre stalk out & halve the leaves)

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. Add the zucchini and the coriander to the TM bowl and blitz for 3 secs / speed 5. Scrape down sides of the bowl
  2. Add all the remaining ingredients, including salt and pepper, to the bowl and mix for 20 secs / Counter-clockwise operation / speed 3
  3. Scrape down the sides of the bowl and mix for a further 20 secs / Counter-clockwise operation / speed 3
  4. Let stand for 15 minutes
  5. While mixture is standing, heat and grease a large frying pan with butter
  6. Drop tablespoons of mixture into heated pan, allowing room between each one for spreading. Cook until bubbles form on surface and begin to break, then turn pikelets and cook the other side
