Ingredients
Gnudi
- 60 g Parmesan cheese, cubed
- 250 g Fresh ricotta cheese
- 250 g fresh spinach leaf, finely chopped, blanched and squeezed
- 80 g plain flour
- 1 egg
- 1/2 tsp salt
- 1/4 tsp ground black pepper
Sauce
- 1 cloves garlic, peeled
- 20 g olive oil
- 20 g fresh mixed herbs, sage, rosemary, parsley
- 40 g Butter
- 100 g liquid stock, vegetable
- 20 g freshly squeezed lemon juice

- Add cheese to bowl 10sec/speed 9/MC on
- Add remaining Gnudi ingredients. 10sec/speed 4/MC on
- Dust hands and bench with additional flour, roll mix into a flour coated sausage, and cut into approx golf ball sized - roll into balls. refrigherate for 30min.
- Bring a large pot of water to boil, add 1/2 tsp salt. While you wait for it to boil - make the sauce.
- Clean bowl and add garlic, chop 3 sec/speed 9/MC on. scrape down.
- Add oil and herbs, cook 5 min/100°c/
"Gentle stir setting" /simmering basket on - add remaining ingredients (except the lemon juice) 5 min/100°c/
"Gentle stir setting" /simmering basket on - While sauce is cooking, and when water has reached a boil, use a slotted spoon to add 1/3 of the gunudi to the boiling water to cook for 3-4 minuites (until they float). Cook a further 30 sec once floating, remove to plate and do the remaining 2 batches.
- once all cooked and the sauce is ready, add the lemon juice to the sacue, then pour the sauce over the gnudi. Top with grated parmesen and herbs.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -
