Cauliflower and Spring Onion Hashbrowns

Ingredients

20 piece(s)

Hashbrowns

  • 500 g cauliflower, roughly chopped
  • 500 g Boiling water
  • 3 sprigs spring onion, roughly chopped
  • 150 g breadcrumbs
  • 150 g grated cheese
  • 2 eggs
  • salt & pepper, a good crack of both
  • olive oil, for frying

Dipping Sauce

  • 1 garlic clove
  • 2 sprigs spring onion, roughly chopped
  • 200 g sour cream

Recipe's preparation

    Hashbrowns
  1. 1. Add boiling water to TM Closed lid, place cauliflower in Varoma and put on top of lid, ready to steam - 10 minutes/Varoma temp/speed 2.

    3. When cooking is complete, remove Varoma basket and empty water from Closed lid. Place cauliflower into Closed lid and mash - 10 seconds/speed 4.

    4. In this order, add spring onion, breadcrumbs, cheese, eggs and salt & pepper. Blend - Counter-clockwise operation10 seconds/speed 4.

    5. Heat a frypan witb olive oil and drop tablespoonful's of mixture into pan, frying until golden brown on both sides. 

     

  2. Sauce
  3. 1. Place garlic into Closed lid and chop - 3 seconds/speed 7.

    2. Add spring onions and chop - 3 seconds/speed 5. Scrape down sides.

    3. Add sour cream and mix - 5 seconds/speed 3.

Tip

As each hashbrown has finished frying, I place them onto a piece of paper towel to absorb some oil.

Serve with veggies, or salad. My kids LOVED these!

    Made these for dinner tonight - they were so tasty and easy to make. This was a great recipe using up some cauliflower, Mersey Valley cheese and old bread. Delicious! Will make again!
