Vegetable red Thai curry - very easy & very tasty dinner

Ingredients

4 portion(s)

Vegetable red Thai curry

  • pumpkin
  • cauliflower florets
  • broccoli florets
  • carrot
  • sweet potato
  • coconut milk
  • 3 heaped teaspoons Red Thai curry paste, Use more if you want more spice

Recipe's preparation

    Vegetable red Thai curry
  1. Chop all veggies into small pieces and place into thermomix 

    Pour in tin of coconut milk

    Add 3 teaspoons of red Thai curry paste

    Mix on Counter-clockwise operation reverse for a few seconds on speed 2 to mix

    Cook for 20 minutes, varoma, Counter-clockwise operationGentle stir setting

    Serve with rice

    you can add whatever veggies you like & also add chicken at step one if you wish

    Delicious and a great way to use up all the old veg in the fridge. I added a can of rinsed chickpeas and about a cup of frozen peas for the last 7 minutes of cooking.

    Would like to suggest creator of recipe adds the approx quantity of vegetables to be added.  I see a couple of people have said they use 450g.  Makes it easier for those of us who are beginners and not used to determining amounts of liquid vs solids to be used in a recipe.

    Kids loved this.  I used a Massaman Curry Paste and way too many vegies for the liquid quantity (as I was feeding 5), but i'll do double quantity next time and we should be on a winner.

    Love it! I used 410g can coconut milk and 1.5 tbls curry paste and it was perfect. Also added 1/2 block firm tofu which lost its form but was still perfect. Looking forward to making again. tmrc_emoticons.)

    This was quick, super easy and very tastey!   I used 450g veggies and one large tin of coconut milk, next time I'll double the quantity because it only made enough to feed to hungry people.

    An easy meal made for tonight's tea at 10am this morning. just need to cook rice and re-hear curry. 

    I used about 450 gms ov veggies and a tin of coconut milt. I also used left over Thai massaman curry paste and it tastes great.

    Very easy and tasty !

    You can do it with any kind of vegetable you have on hands.

    Instead of coconut can, you can do your own coconut milk in the thermomix, mixing 100 g desicated coconut with 500 g water, 2 min at speed 10. Double quantity depending amount of veg and how much sauce you like.
