Recipe is created for
TM 5
If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- If using the TM to grate your parmesan, do this step first and set aside for later - grate cheese for 8-10 seconds on speed 8.
Place onion and garlic in TM bowl and chop for 5 seconds, speed 5.
Scrape down bowl, add oil and saute for 2 minutes, 100 degrees, spoon speed, MC OFF.
Add tomato paste or pesto and cook for 1 minute, 100 degrees, spoon speed, MC OFF.
Add diced tomatoes, salt, pepper and stock concentrate and cook for 3 minutes, 100 degrees, spoon speed, MC ON.
Place mince into TM simmering basket and spoon some of the sauce over the top of the mince. Put the basket (with mince inside) into the TM bowl with the sauce. Cook for 15 minutes, 100 degrees, speed1. About halfway through cooking break up the mince using a fork.
WHILE THE MINCE IS COOKING, prepare your pasta on stove top (or your preferred method) as per packet directions. Once the pasta has cooked, drain and sprinkle with about half of the grated parmesan cheese and stir through. Pour into a baking dish while you wait for the sauce to finish cooking.
WHEN MINCE HAS FINISHED THE FIRST COOK, tip mince out of the basket and into the TM bowl with the sauce. Cook for a further 5 mintues, 100 degrees, reverse, spoon speed.
Once the sauce is done, pour into baking dish with the pasta and mix until well combined. Stir through baby spinach. Top with remaining parmesan cheese and either goats cheese or ricotta cheese.
Bake at 180 degrees for 25 minutes.
Garnish with fresh basil leaves.

Fantastic recipe. I followed it but added 2 slices of chopped bacon to the meat, which I actually fried on the stove to ensure the texture was how we like it. Certainly a hit with grandsons 5 and 3 and daughter, husband and myself. Will definitely be making again... soon! Thanks so much.

I add zucchini, carrot and mushrooms too. And this is a bit strange but I don't make it in the thermomix!! I use this recipe and cook the mince mixture on the stovetop. I don't really like the texture of mince cooked in the thermo. Very delicious

Thanks Fisch79 for your comments. It is advisable to read a recipe all the way through before cooking it so you know what you need to do, however I have taken your comments into consideration and have edited the recipe and moved the instructions for cooking the pasta, earlier up in the recipe

This was delicious. We had dinner guests & they also enjoyed it too. it was great that I could prepare in the thermomix before they arrived, then simply pop it in the oven & serve with a salad when they arrived. Even though it made a large amount we had none left as we all had second helpings!
I added mushrooms before baking. Also I had no stock but it still tasted great.

This is a great recipe, my super fussy daughter absolutely loves it Definitely a regular in our house, I cook this weekly.
I found it a little lacking
I found it a little lacking in flavour. I don't know if that is because I added hidden vegies or not. I will make again though because my toddler loved it and even ate the spinach.
Family and I loved the final
Family and I loved the final product. However I was under impression at first quick glance that pasta was cooked with the sauce. Didn't realise till sauce nearly done that I needed to cook pasta separately. This delayed the timing of the meal. Followed recipe exactly (although had made my own 'diced tomatoes' earlier in the day) as I'm still learning what Thermomix can do and I wasn't a confident cook to start with. Might possibly recommend mentioning cooking of pasta earlier for people like me (e.g. After 'Add diced tomatoes...'). But loved it all the same and even my fussy 4 & 7 year old ate the spinach leaves and had seconds, which for any parent is great! Thanks for the recipe. Will add etc 'hidden' veggies next time.

Love this! Was becoming a bit bored of the weekly spag bol & this is a good variation. The mince does not become pureed & the ricotta gives the sauce a nice creamy texture. Will become a regular on our meal plan.

Great recipe and flavour. We added extra grated veg (carrot, zucchini, red capsicum) which bulked up the meal and included more Vegetables. I also used gluten free pasta, and lactose free cheese instead of Parmesan and ricotta. We had so much left over for a few meals During the week. Definite winner.
