- 150 g Parmesan cheese
- 500 g smooth ricotta cheese
- 250-300 g plain flour
- 2 eggs
- 2 egg yolks

- Put parmesan cheese in thermomix bowl, speed 8 for 10 seconds
- add remaining ingredients and knead for 30 seconds until combined
- put mixture out onto floured bench, sprinkle with more flour and work into a ball
- cut ball into 4, and into half again (so you have
roll into logs, cut approx 1.5cm pieces
(either use fresh or freeze at this point) - large pot of boiling water, gently add gnocchi, once is floating at top (approx 2 mins) remove gently with a slotted spoon. Serve with sauce.
