- 20 grams Parmesan cheese
- 4 sprig Basil leaves
- 1 leek, (cut into chunks)
- 2 cloves garlic
- 10 grams olive oil
- 2 tomotoes, (quartered)
- 300 grams arborio rice
- 1 tablespoon vegetable stock
- 1/4 teaspoon chilli powder, (optional)
- 1/2 teaspoon tumeric, (optional)
- 400 grams pumpkin, (cut into 2cm cubes)
- 260 grams chicken, (1 chicken breast diced)
- 600 grams water

Recipe's preparation
Place parmesan into "Closed lid" and chop for 10 seconds / speed 9. Add basil leaves to "Closed lid" and chop for 5 seconds / speed 7. Set aside pamesan & basil mix into separate bowl.
Place leek and garlic in "Closed lid" and chop for 5 seconds / speed 7. Add oil and saute for 2 minutes / 100 degrees / speed 1.
Add quartered tomatoes and chop for 5 seconds / speed 3.
Insert butterfly to "Closed lid" .
Add water, chilli (optional), tumeric (optional), stock and pumpkin and cook for 5 minutes / 100 degress "Counter-clockwise operation" "Gentle stir setting" .
Add rice and chicken and cook for 20 minutes / 100 degrees "Counter-clockwise operation" "Gentle stir setting" .
Pour into thermoserve ad stir through basil & parmeson (from step 1) then allow to rest for 5 minutes prior to serving.

Perfecto! I blitzed the tomato for double the time to be smaller chunks and left out the chilli and tumeric (as I’m allergic) and added in Tuscan seasoning and extra garlic. Yummy!!!!

Delicious!!!!! All my family loved this dish. I have three boys who are not always fans of risotto but they all commented how yummy it was and asked if we could have this risotto again. I didn’t have pumpkin so used sweet potatoe and added 50gm diced bacon. The chilli and turmeric added a beautiful flavour that wasn’t too hot. Will make this one again.

Pumpkin risotto : perfect for a cold winter's night!
Tip: I added bacon( fried with garlic and onion instead of leek) plus a few small cubes of sweet potato. They kept their shape and added nice colour with some peas.Instead of tomatoes I used tomato puree.

Yum. I used real chicken
Yum. I used real chicken stock instead of paste and water and blended the tomatos into the stock before adding. A squeeze of lemon peps it up a bit at the end.

My son who refuses to eat
My son who refuses to eat vegetables said it was the best rice he had ever tasted! I used bacon instead of chicken - chopped up and sauteed with the leek and garlic. You would never know there were tomatoes in this recipe!

Wow... My husband ate pumpkin
Wow... My husband ate pumpkin and said it was yummy. 10 stars for that... I make our risotto with brown rice (as white rice is on the "list of things you should never eat"... I just pop the rice in the basket for 20 mins and leave it draining until I need it again). In saying that: I think it could be possible to pop double the amount of rice in for the initial steam should you be needing to make 2 lots of risotto. I used chicken legs and stock (made in slow cooker from chicken bones, from a different meal... then turned my bones into more ckn stock). 1kg of ckn legs made enough ckn meat and stock for 2 risottos. I had a small leak so I added a eschallot. Our bazil died compliments of cyclone marcia so I used dry and it was delish.

Made for first time and only
Made for first time and only had thermomix for month. I didon't add leek. And put in thermosever till we got home from sport but found it a bit mushy. what would I have done wrong or is this how risotto is in the thermomix? Still nice flavours. Thanks

Great recipe. So tasty. I didn't have leek so added half a green capsicum in place of it. I also only used 300g pumpkin and then added 100g carrot, plus I put an extra half a tablespoon of veggie stock in. It turned out delicious and my husband and 15month old loved it too!

The tomatoes didn't chop on speed 3 so I had to increase the speed. I used 2 tbsp of vege stock and no chilli or turmeric.

Enjoyed by the kids and adults in the house I left out the tumeric and the tomatoes and used two tablespoons of stock, but the recipe was fantastic. Love the parmesan / basil blend stirred through, might use this for other dishes! Chicken was cooked perfectly. Texture was a bit mushier than I usually have risotto, but I think that might be a thermomix thing not a recipe thing.
