Ingredients

Slice Base

  • 40 g Butter
  • 70 g almonds or almond meal
  • 50 g dessicated coconut
  • 25 g Monk Fruit Brown Sugar

Caramel

  • 80 g water
  • 110 g full cream milk powder
  • 120 g Butter, Cubed
  • 100 g Monk Fruit Brown Sugar
  • 60 g sugar free maple syrup

Chocolate Topping

  • 100 g Noshu Sugar Free Chocolate Chips, Or other sugar free brand

Recipe's preparation

    Slice Base
  1. Preheat oven to 180 degrees

    Put all slice base ingredients in the Thermomix bowl and blend on speed 10 for 10 secs (if you used whole almonds, you may need to scrape and blend a second time
  2. Press mixture out into a slice tin, prick it with a fork all over and bake for 10mins at 180deg. I use the small rose gold oven tray (17cmx25cm)
  3. Caramel
  4. No need to wash bowl, Put all caramel ingredients in the Thermomix bowl and cook 24mins, 90degrees, speed 4
  5. When it's complete, the caramel will be quite runny
  6. Pour into slice tin on top of base and Bake on 180deg until all bubbly (approx 10-15mins)

    If you have extra caramel keep it in a jar in the fridge to add to your coffee or make a milkshake with!
  7. Chocolate Topping
  8. After you remove from the oven, spread 1/2 packet of Noshu sugar free chocolate chips over the top of the caramel, leave to melt for 10mins and then spread across with spoon
  9. Set in the fridge - score when chocolate is still soft (around 1 hour after putting in the fridge). Slice when it’s completely set (3-4 hours+)

Tip

This recipe is adapted from Ali Hammo's OMG Caramel Slice

You can easily double the recipe and keep all the cooking times the same (use a larger slice tray)

I usually cut it into small pieces (approx 24) and it works out to be about 2.4 net carbs per piece.

I haven't tried it with alternative ingredients, let me know if you do 😀
