Chicken and Zucchini brown rice Risotto
- 1 onion, halved
- 2 cloves garlic
- 4 sprigs flat leaf parsley
- 15 g olive oil
- 420 g brown rice, medium grain
- 130 g white wine
- 300 g skinless chicken thighs, boneless, sliced into small pieces
- 400 g water
- 2 teaspoon stock paste
- 300 g zucchini, cut into chunks
- Salt and Peper, to taste
- 20 g Butter
- 40 g Parmesan cheese, Grated

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Add zucchini to mixing bowl and chop 3 sec/speed 5.5. Place into a bowl and set aside.
- Add onion, garlic and parsley to mixing bowl and chop 3 sec/speed 7
- Scrape down sides with spatula. Add oil and saute 3 min/varoma/ speed 1
- Insert butterfly. Add rice and wine and saute 2 min/100"Counter-clockwise operation" speed 1
- Add stock and water. Place sliced chicken in Varoma basket, cover with lid and place on top. Cook 20 mins/100/"Counter-clockwise operation" /speed 1
- Add reserved chopped zucchini. Add chicken. Insert mixing cup into lid and cook 20 mins/100/"Counter-clockwise operation" /speed 1
- Pour into a serving dish and add parmesan cheese and butter stir through. Allow to sit 5 mins before servin.

Tip
Serve with salad.
For a dairy-free version, omit the cheese and butter at the end.

Very nice. I made it FODMAP friendly by switching the water to FODMAP chicken stock, using 10g of onion infused oil and 10g garlic infused oil. I also added spinach at the end and omitted the onion, garlic and thermomix stock.
