Chicken, Bacon, Mushroom Risotto

  • 60 grams Parmesan cheese, Cubed
  • 1 brown onion, Peeled and halved
  • 2 cloves garlic, Peeled
  • 40 grams Butter, Cubed
  • 40 grams Evoo
  • 320 grams arborio rice
  • 2 chicken thighs, Sliced
  • 3 pieces rasher bacon, Rind removed, cut into pieces
  • 60 grams white wine, Dry or cooking wine
  • 1 heaped tablespoon Vegetable stock paste
  • 6-8 mushrooms, Sliced
  • 700 grams water

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place parmesan cheese into mixing bowl grate 10 sec/speed 10. Transfer into a bowl and set aside. Clean and dry mixing bowl.
  2. Place onion and garlic into mixing bowl and chop 3 sec/speed 5. Scrap down sides of bowl
  3. Add butter, olive oil and bacon and saute 3 mins/120c/speed 1.
  4. Insert butterfly whisk. Add rice and saute 1 min/120c/Counter-clockwise operation/speed 1.5 MC OFF.
  5. Add wine and saute 2 mins/VAROMA/Counter-clockwise operation/speed 1.5 MC OFF. Use spatula to loosen rice.
  6. Add Water first and use spatula to loosen rice again, add stock, mushrooms and chicken . Cook 15mins/100c/Counter-clockwise operation/speed 1.5 use simmering basket instead of MC
  7. Transfer into ThermoServer. Add reserved parmesan cheese and allow to sit for 5 mins before serving.

    Love this recipe so yummy & easy. I use pumpkin instead of mushroom and skip the wine & use a chicken stock in it's place. Absolutely Divine!Smile
