      TM 5
If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place parmesan cheese into mixing bowl grate 10 sec/speed 10. Transfer into a bowl and set aside. Clean and dry mixing bowl.

  2. Place onion and garlic into mixing bowl and chop 3 sec/speed 5. Scrap down sides of mixing bowl with spatula.

  3. Add butter, olive oil and bacon and saute 3 mins/120c/speed 1.

  4. Insert butterfly whisk. Add rice and saute 1 min/120c/Counter-clockwise operation/speed 1.5 without measuring cup.

  5. Add wine and saute 2 mins/VAROMA/Counter-clockwise operation/speed 1.5 without measuring cup. Scrap bottom of mixing bowl well with spatula to loosen rice.

  6. Add stock paste, mushroom powder, chicken breast and water. Scrap the bottom of the mixing bowl again to loosen rice. Cook 13mins/100c/Counter-clockwise operation/speed 1.5 placing simmering basket instead of measuring cup onto mixing bowl lid.

  7. Transfer into ThermoServer. Using the spatula, combine with reserved parmesan cheese and serve immediately.

Shiitake Powder - Using dried shiitake mushrooms, mill for 10sec/speed 8. To omit, replace with 250g mushrooms of your choice.

Dried mushrooms are often packed with silica gel packets, make sure you remove before tipping the whole packet in.

I only used 1 heaped tablespoon veg stock as added more bacon and used cup mushrooms and 2 chicken thighs instead. Extended cook time by 2 mins and stirred through baby spinach when in thermoserver.

Delicious! Full of flavour. I did both dried shitake mushrooms and fresh. I only included 15 grams of nutlex instead of the 40g butter and 40g oil as I don't like an oily risotto. it worked well. Thanks Kerry

This didn't turn out so well for me - a bit too salty and watery. Everyone ate it but there weren't any rave reviews

This was a delicious meal the whole family enjoyed, even my toddler cleaned her plate with this one! I used whole mushrooms instead of the mushroom powder.

  • When making the mushroom

    Submitted by KA71 on 28. November 2015 - 14:25.

When making the mushroom powder, there is a silica gel sachet in the packet. I didn't realise this until I found shredded plastic in the powder. Had to throw it out and buy more mushrooms.

Fantastic! Even my fussy father-in-law loved it.

I added some chopped baby spinach leaves at the end and stirred them through with the Parmesan to add a bit more colour and veges tmrc_emoticons.-)

Made it in the tm31. Oops!  Cooking 9 turned out alright, used mushrooms, more bacon than recipe asked for and substituted more wine for water Party Big Smile  Came out a little salty, I would reduce the stock next time. I've put it in the thermo server to soak up the liquid as the rice was just under done. I'm hopeful! Still I'd try it again!
