Risotto
- 50 grams cheese, Cubed
- 1 onion, Peeled and quartered
- 1 clove garlic
- 20 grams olive oil
- 200 grams Diced ham pieces
- 200 grams mushrooms, Quartered
- 100 grams Aborio Rice
- 400 grams water
- 2 teaspoons chicken or vegetable stock paste
- 1 Handful baby spinach, Washed
- 75 grams cream, Optional
- 1 teaspoon lemon juice
- Small amount of parsley, Chopped

Recipe's preparation
- 1. Place cheese into "Closed lid" and grate sp 7/10 seconds. Set aside
2. Add peeled garlic and onion to "Closed lid" and grate sp4/10 seconds. 3. Insert butterfly.
4. Add ham, mushrooms and oil to "Closed lid" .
5. Cook on Varoma, sp2/10 minutes "Counter-clockwise operation" .
6. Add rice and stir on Varoma sp1/"Counter-clockwise operation" , 3 minutes.
7. Add water and stock and cook at 100C, "Gentle stir setting" / 16 minutes.
8. Add spinach, cheese and optional cream.
9. Stir "Gentle stir setting" for 1 minute.
10. Serve sprinkled with parsley and extra cheese if desired.

I’ve never actually tried to freeze it so I can’t say how it would go. My concern would be that the cream/ lemon juice may split. In which case I would freeze it without these ingredients and add later..?

As per previous comments we reduce the water to 320g & use the cream too.
We also use bacon instead of ham.

We love this recipe! I feed 6 with it (husband, me & children aged 11, 9, 7 & 5 - not big eaters admittedly) by adding sliced and buttered French stick on the side - perfect for wiping up the sauce. I will need to double the recipe in time - has anyone tried doubling in one batch or does that become a problem quantity-wise in the bowl (I have a Tm31)...?

Last nights dinner using up leftover ham and bacon. Did use 400ml water however if I wasn't using all of the ham and bacon, I would reduce it a little. Very nice and a winner with my son. Will cook again. Thanks for sharing.

Super Yummy! I used 350g water after reading some of the comments about people using 320g but also wanted to see if a little more would work too and it was lovely, I'd probably do it with water anywhere between 320-400g, I added the cream as well. The sauce thickened nicely when we left it to cool for a few minutes and we used double smoked ham so it had a nice smokey taste to it as well.

so tasty my 2 year old had 2 bowls dad had 4, master 5 however the fuss pot didnt want a bar of it but thats ok it was so Yummy and i won the 2 yar old over. will def be making this again. I doubled the receipt and used bacon instead of ham and zucchini instead of mushrooms. could have used a little less water but still turned out great

Best risotto I have ever made. So delicious
I forgot to put the butterfly
I forgot to put the butterfly in before step 3, so my poor mushy's ended up in little pieces. I normally keep them big so the kids can pick them out, so I just hoped they wouldn't notice them. They absolutly loved this. I will need to make a double batch next time as hubby wanted more but the kids ate what was left lol. It was so easy and super tasty. I'll even cut the mushy's up each time now, the kids had 3 serves each. Not bad for a 2 & 4 year old.

Lovely quick recipe. I used bacon instead of ham, next time I will stI'll use bacon and reduce the amount to 150g. i used 320g of water as suggested and the consistency was perfect although next time I think I may leave the amount of water at 400 or a little more and increase the rice to around 140, all trial and error to match your tastes but it is a winner!

Cant believe how quickly this
Cant believe how quickly this yummy meal left the plates of my little ones - quickly into their tummys! Delish! Easy and yum. I added extra 50gm of rice and used some grated parmesan I had in the fridge in lieu of the cheese, bacon in lieu of the diced ham and left out the lemon as we didnt have any. Left the MC off the lid so some water could evaporate and it was perfect. Super scrummy and will definitely have again. Thanks for posting the recipe!
.. P.S. fed 2 (female) adults and 2 (young) kids with a small lunch serve left over. We did have vegetables as a side though - so if eating it on its own, you may need to double recipe?
I made this tonight and as
I made this tonight and as per previous comments I only used 320ml of water. While the risotto was cooking for the 16 minutes I cooked 2 chopped chicken breasts on the stove in a pan until brown. I then added it to the thermomix when I added the cream at the end. I didn't add the lemon as I didn't have any. It was the best risotto I've ever made. It was delicious and everyone loved it. It made enough to feed 2 adults and a child and a small serve left for lunch for me tomorrow. Thanks for the recipe

A winner all round! I added chicken with the mushrooms. Also added a bit of white wine at the same time. Not enough for our family of 2 adults plus our 3 year old so I'd add more rice and liquid next time.

Was going to make mushroom risotto on chip tonight & saw this & decided to try it. Yum yum!! I reduced water to about 310 grams because my husband does not like 'a lot of liquid' (typical male lol) & it was just right. Many thanks for a great recipe
