- 60 grams Parmesan cheese
- 25 grams spring onion
- 250 grams bacon cube
- 3 eggs
- 1 egg yolk
- 2 pinches black pepper
- 300mil thickened cream
- 30 gram Olive Oil.

Place Parmesan cheese into mixing bowl and grate 10sec/speed10 and set aside.
Cut spring onions into (roughly) 10 cm pieces and place into mixing bowl. Chop 3sec/speed5 repeat if you like it finer
Add bacon & olive oil into bowl and saute 5min/120deg/speed1
Add eggs, egg yolk, reserve grated cheese, black pepper & thickened cream and mix 3min/120deg/speed3
Your carbonara sauce is now ready to be added to a pasta of your choice =)
Add measuring cup when your thermomix is in use =)
