Curried Tuna & Rice

Ingredients

4 portion(s)

Rice Base

  • 1 --- cup rice
  • 1 egg
  • 1 tablespoons Butter
  • Salt & Peper, to taste

Tuna Layer

  • 440 g tuna, canned

Sauce

  • 380 g Milk
  • 1 tablespoons curry powder, Or more to taste
  • 35 g Butter, extra
  • 25 g cornflour
  • 100 g mayonnaise
  • 2 tablespoons parsley, chopped
  • 1 egg, extra
  • 2 teaspoons lemon juice
  • 90 g cheese, grated

Recipe's preparation

    Grate Cheese
  1. Grate cheese 4 sec / speed 6. Set aside
  2. Rice Base
  3. Cook rice as per instructions on packet and drain. Combine with butter, egg and salt & pepper. Spread over base of large pyrex dish. Arrange drained flaked tuna on top.
  4. Sauce
  5. Mix extra butter, cornflour, curry, milk and mayonaise in TM bowl 8 min / 90c / speed 4. Add lemon juice, parsley and extra egg, mix 2 min / 90c / speed 4. Spoon over tuna. Top with grated cheese.
  6. Heat 180c for 30 mins till cheese is golden.

Tip

I often only put in half the tuna and add 4 diced hardboiled eggs!

    Everyone had seconds which is a good sign in my household of fussy eaters. Next time I make it though, I'll omit the lemon juice from the sauce and lay a bed of plain cooked rice (no egg, butter or seasoning).

    Delicious. I only had a 185g can of tuna so I added hard boiled eggs.
    I cooked them at the same time as the rice ( in the steaming basket) for 16 minutes Varoma and they were ready at the same time as the rice. Perfect.!

    Delicious. I love tuna but the rest of my family doesn’t. So.....I decided to make the option of using the smaller tin of tuna and the boiled eggs. Really great, economical meal and the husband even took leftovers to work for lunch. Now that’s really saying something!
