Lugaw (Filipino rice porridge)

Ingredients

Lugaw

  • 30 g Spring Onion/Shallots, diced
  • 2 Garlic cloves peeled
  • 2 cm ginger, fresh
  • 30 g Olive Oil.
  • 2 tablespoon TM Chicken Stock Paste, (from Quirky Jo)
  • 500 g Chicken Cubed
  • 50 g glutinous rice
  • 200 g Jasmine rice
  • 1.1 litres water
  • 20 g light soy sauce
  • 10 g fish sauce

Recipe's preparation

  1. Mince onion, garlic and ginger for 5 sec / speed 7.

  2. Add oil, chicken stock and dice chicken and sautee for 3 min / varoma / speed 1 on counter-clockwise operation.

  3. Add all rice, all sauces and water and cook for 25 min / 100C / speed 1 on counter-clockwise operation.

Tip

This recipe makes for a really thick batch. Add more water to have a more runny lugaw.
