Roasted pumpkin
- 800 g pumpkin, I prefer Jap/Kent
- 4 cloves garlic
- 3 sprigs rosemary
- olive oil light
- salt and pepper to season
Risotto
- 40 g Parmesean cheese
- 150 g onion
- 3 slices rasher bacon
- 40 g Butter
- 40 g extra virgin olive oil
- 320 g Arborio rice
- 60 g dry white wine
- 1-2 tbsp TM vegetable stock concentrate
- 720 g water

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Preheat oven to 180 degrees
Peel and cut pumpkin into small pieces.
Toss pumpkin pieces into baking tray and add garlic and rosemary.
Add desired amount of olive oil and season with salt and pepper.
Bake for 30 min or until cooked.
Set aside.
Place Parmesan cheese into mixing bowl and grate 10 sec/speed 10. Transfer into a bowl and set aside. Clean and dry mixing bowl.
Place onion into mixing bowl and chop 3 sec/speed 5. Scrape down sides of mixing bowl with spatula.
Cut bacon rashers into batons/pieces, which ever you prefer.
Add butter, bacon and extra virgin olive oil and saute 3 min/120 degrees/speed 1/"Counter-clockwise operation" .
Insert butterfly whisk. Add arborio rice and saute 1 min/120 degrees/"Counter-clockwise operation" /speed 1.5, without measuring cup.
Add white wine and saute 2 min/Varoma/"Counter-clockwise operation" /speed 1.5, without measuring cup. Scrape bottom of mixing bowl well with spatula to loosen rice.
Add stock, roasted pumpkin and water and again scrape bottom of mixing bowl with spatula to loosen. Cook 13 min/100 degrees/"Counter-clockwise operation" /speed 1.5, placing simmering basket instead of measuring cup onto mixing bowl lid.
Transfer into ThermoServer. Using the spatula, combine with reserved Parmesan and serve immediately.
You could also garnish this with extra pan fried bacon if desired.

Made last night, great taste. Only criticism was that I found it difficult to add the butterfly whisk due to the amount of volume (butter, bacon) already in the thermobowl.
Subsequently I don't think I inserted properly as it wobbled all over the place when mixing
Other than that, great recipe, would use again.

Well done ChannelingMartha, such a yummy recipe. I used apple cider vinegar instead of wine also substituted jasmine rice. I cooked the rice stage for 20 minutes. Ended perfectly. I was impressed with the amount it made. Thankful for this recipe.

Delicious, didn’t have rosemary so used Sage, and I roasted the pumpkin with speak and a red capsicum and added it in the last 5 minutes. I also cut up fresh beans and put them at the bottom of the bowl and pour the risotto over the top and wait 5 minutes to keep them crunchie.

Absolutely loved this. Only had 1/2 butternut...
Absolutely loved this. Only had 1/2 butternut pumpkin so used mushrooms aswell which i put in when chopping the onion (worked great as it hid them from the kids). Used 6 pieces of maple glazed bacon rashers. Cooked this exactly how the recipe said, it was runny and rice not cooked once finished so i put into a stainless steel bowl mixed the parmesan cheese through covered with foil and let it sit for 15 mins (i don't own a thermosaver yet but this worked great, kept it hot). It thickened up and rice cooked perfect the kids loved it as much as we did

One of my fave risotto recipes used tm31 so just filled water to the max line needed to cook for about 18-20mins for me to avoid crunchy rice though. Winning recipe in our household!!

So yummy! I only had 400g of pumpkin so added 400g frozen peas. Also cooked it for 6 minutes longer as the rice was still a bit too firm for my liking. I had two helpings and there was enough left for the next night (2 adults, 2 little kids). Will make it again for sure!

This is super tasty! I used
This is super tasty! I used dried rosemary as didn't have fresh. Actually forgot to add the garlic, but it is still full of flavour. Rice was slightly crunchy after 13 mins, but after sitting in the Thermoserver for a few minutes it was perfect, so I wouldn't increase the cooking time. Will experiment with other veggies next time, or add some shredded chicken.

Really tasty risotto! halfway
Really tasty risotto! halfway through cooking the pumpkin in the oven I added a tray with the bacon so it was nicely cooked. I also followed anothers comments and mashed the garlic after roasting it and putting it into with the pumpkin. I did cook for the further 3 minutes too and turned out perfect, my kids loved it!

I cooked this in the tm31 & used varoma instead of 120 degrees. I also had to cook for an extra 3 mins at the end as the rice was still crunchy. I added some baby spinach into a separate bowl & stirred through the risotto. Texture was good with nice flavours. Toddler loved it!

Delicious - it worked out perfectly. I omitted the bacon and stirred through some raw baby spinach leaves at the end. I topped it with toasted pine nuts, extra Parmesan and pan-fried chicken tenderloins.
