Tomato and salami risotto

Ingredients

2 portion(s)

  • 1 Brown onion, quartered
  • 2 cloves garlic
  • 20 grams olive oil
  • 180 grams arborio rice
  • 90 grams dry white wine
  • 350 grams water
  • 1 heaped tablespoon vegetable stock
  • 1 can diced tomatoes
  • 150 grams salami
  • 50 grams parmesan
  • 1 tablespoon Butter
  • 1 bunch Basil leaves

Recipe's preparation

  1. Add onion and garlic to the mixing bowl, chop 2 seconds on speed 6, scrape downa and repeat if necessary. 

     

  2. Add the olive oil and cook 1 minute/ 100°/ speed 1, MC off 

  3. Add rice and wine, cook 2 minutes/ 100°/ speed 2 Counter-clockwise operation

  4. Add water, stock and tomatoes. Cook 14minutes/ 100°/ speed 2 Counter-clockwise operation

  5. Slice salami in strips and put in bottom of thermoserver. 

  6. When rice is done cooking, pour into thermoserver, add butter and parmesan, stir through and let rest for 5 minutes with the lid on. 

  7. Sprinkle fresh basil leaves over and serve

    I made this tonight as a stuffing for squid tubes. I reduced salami to 70g and added 65g of sliced Kalamata Olives and 15g of baby capers with the tomatoes, water and stock.

    My 9yo daughter calls all my risottos variations of mush. There's green mush (cheesy spinach), brown mush (beef and peas), orange mush (spicy capsicum) etc etc... I cooked this recipe last night and she dubbed it delicious mush Lol
    Also a huge hit with the husband too. I added olives and feta to my portion which was amazing. We're already planning which pizza toppings to add for next time.

    We'll definitely be making this a staple.

    I needed to cook the rice for an extra 6 minutes (it was still a bit hard after 14mins) & I added some chopped zucchini & spinach leaves. Will be making this again!

    Perfect comfort food.

    This recipe was a hit in my family. I used an anchovy infused oil, hot salami and fresh tomatoes. I doubled the recipe to ensure we had leftovers for a quick meal to reheat. Not sure if it will last. Just too delicious. Thanks for posting this one.

    I thought this was really nice.  I used 5 fresh tomatoes instead of a tin as I had to get rid of them, I just stuck them in after I had chopped the onion and garlic and whizzed them up.  I also used chilli salami to give it some kick.  Got the thumbs up from a risotto hater and I also think it makes more than 2 serves.

    Loved this! Great ratios and not too much rice like some rissoto recipes. Added zucchini & pumpkin in for the 14min at end. Toddler even ate it.

    This was nice by all accounts... Only wish I'd known it was for 2 servings and I maybe then I would have gotten a taste! As it was, it was barely enough for 3 people. Boo hoo I missed out! A good sign it was yummy perhaps?! tmrc_emoticons.;-) Next time I'll look for the "servings" fine print. A lesson learned tmrc_emoticons.;-)

    Came home from work with no dinner planned. Had salami so googled recipes and came across this little gem. So quick, easy and tasty!! Substituted the basil for baby spinach and wine for water. So yummy I went back for seconds!!! 

    this will definately be a regular dinner!

    Yum thank you! Doubled the quantity of rice, doubled the liquid and cooked it for 20 minutes. I fried up the salami, threw in some cherry tomatoes, Spanish onion and baby spinach. Delicious and  a new family favourite.
