  • 500 g balsamic vinegar
  • 50 g raw sugar

Recipe's preparation

  1. 1/ Set scales and weigh sugar and vinegar into TM bowl.



    2/ Cook for 25 mins / Varoma temp / speed 2 with MC removed and simmer basket in its place.

    Also when you say you add raspberries to it, do you use fresh or frozen raspberries? And do you just add them into the bottle then pour the sticky balsamic over the top or do u add them in while cooking? And how many would u add? Thank you in advanxe. Xoxox

    I haven't made this yet, but will definitely make tomorrow. I make ' babblingapril's' caramelised onion recipe from 'the community'.
    I have been using a bottle of caramelised balsamic I was given as a gift and it is even lovelier.
    Cant wait to make my own caramelised vinegar.

    Also I know it was a while ago, but some one asked about bottles. I buy new bottles and jars from this man John, in wagga, but you can buy online at Sales@austrapak.com.au

    Absolutely delicious. First tried this at a wedding a few months ago and I'm so glad I can recreate it perfectly now!

    TIP: make sure the kitchen is well ventilated because my house currently smells like it's been flooded with balsamic vinger. First batch was alright, but now I'm on my third and final to bottle for Christmas presents and my eyes are stinging and I feel like I'm breathing in the vinegar lol

    Also, just FYI I've found that this recipe makes approximately 175ml, perfect fit for a 200ml jar

    We made this but instead of 50 g of sugar used 30 g of dextrose (sugar without the Fructose and readily available at woollies in the brewing section) and 20 g of 100% you Canadian maple syrup - it was nothing short of amazing! Will definitely be using this over our roasted beetroot and sweet potato salad instead of sugar laden bought dressings, thank you so much.

    I made this the other day and it's beautiful. I would love to give the Rasberry idea a go too. I assume that you can throw fresh raspberries in the bottle and the vinegar preserves it anyway??

     

    I just used the Coles brand Balsamic too, a hint if you're buying it though, 500ml is less than 500g vinegar (vinegar weighs less than water) so you might need to buy more than one bottle to make this (lucky I had another half a bottle in the pantry).

    I've been making bottles and bottles and bottles of this for Christmas presents! Everyone has loved it. I have been adding raspberries to it and it is just amazing! I use the Coles Brand Balsamic Vinegar and it has been a real hit. I'm just about to make my 15th bottle! I haven't doubled it yet but I am considering doing that right now because it is a little time consuming when making that many! Thank you so much for this! I bought my sister a bottle of Raspberry Caramelised Balsamic Vinegar for $25! I am so glad I can keep making her some for a fraction of that cost!

    Dear mythermomix, this should work OK with any brand of balsamic, as long as you're sure to leave out the MC so it can reduce. If you like it thicker, just extend the cooking time by 5 minutes at a time, continually checking. You will also notice the consistency thicken a little on cooling.

    Thank you for sharing this recipe! I actually had a store bought balsamic reduction that i have used so sparingly because it was a bit pricey and a bit precious.  I was excited to see this recipe and just finished making it and i am extremely happy with the result and it is already decantered into my fancy bottle!

    The only thing i will do differently is use the amounts shown above.  I made half the amount as i was unsure if i would be able to use the bottle i had set aside.  It does reduce and thicken quite a lot.  Do yourself a favour and buy yourself a 500ml bottle of balsamic vinegar next shop and give this 'set and forget' recipe a go. You will be thrilled!
