  1. this Labne is made using  a batch of pre-made EASIYO HOMEMADE YOGURT -THERMOMUMMA from the recipe community (very easy yogurt that can be made sweet or by leaving out the sugar and vanilla -PLAIN) 

    After making your yogurt as above, place a sieve or your Thermomix steaming basket over a small bowl. Line it with a milk bag or muslin cloth, measure two cups of the yogurt into the milk bag and gather into a ball shape. Secure bag with a rubber band and suspend above a bowl to drain overnight or 24 hours in the refrigerator until thickened. Transfer Labne into a container label and date. 

     

    The whey that drains off can be used in other recipes but use it within 3 days and keep refrigerated

  2. Sweet Flavour Booster for Labne 

    Using the Women's Weekly 'Made From Scratch' cook book I used half of the Labne batch to flavour into Marrakech cream. Delicious on brioche or pales grain bread as in the photo above.

    stir 1 1/2 tablespoons honey, 1/2 teaspoon of orange blossom water, 1/2 teaspoon ground cinnamon and 1/4 teaspoon ground cardamom into 1/2 cup of Labne

The Yogurt is made in an EASIYO maker available from Coles or Woolworths priced around $20 for the one litre version.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
