Ingredients

  • 1 green apple, quartered, skin on and seeds in
  • 800 grams ripe plums, I had asst, halved and stone removed
  • 800 grams raw sugar
  • 1 star anise
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves

Recipe's preparation

  1. Place apple into mixing bowl and chop 5 sec/speed 5.

    Add plums and chop on 20 sec/speed 5.

    Add sugar, star anise and spices and cook for 30 min/100 deg/speed 1. Leave the MC off but put the steamer basket on top to stop splashes.

    Test by dropping a dollop on a very cold plate. If set then you can move to the next step. If not then cook for 5 minutes on Veroma speed 1, using the steamer basket on top.

    Once ready, remove the Star Anise and depending how smooth you want your jam, give it another blend. Bottle and enjoy.

    Great on Grandma's foolproof scones (on the recipe community) and topped with whipped cream!

    Lovely jam, I find myself making it year after year when plums are in season. Beautiful with fresh scones and cream.

    My plum jam was too runny as well, I made a new batch without the apple a little over 800g of Plum and 500g sugar. I noticed that my plums were very juicy when deseeded so I tipped the extra juice out. After 30 min of intial cook time I added one packet of Jamsetta mixed it in with the spatuala and that put it on Varoma speed 1 for 10 - 12 min. Jam turned out perfect!

    I made sure I had plenty of under ripe plums in the mix - as they have more pectin for firmer setting. If all your plums are ripe, continue cooking for longer at a high temp and that should assist.

    Great flavours ! My jam was a little too sweet using sugar amount in recipe. Also was a little runnier than I'd have preferred. Overall a great way to make use of an excess of plums ! Used some jam baked into the middle of cookies (recipe on here called whatever biscuits) ...delish !
