TM5 Classic Tomato Sauce

1500 gm ripe tomatoes fresh with skin on and halved

  • 1 large green apples, Skin on, quartered and core removed
  • 1 large onion, Peeled and halved
  • 150 grams white vinegar
  • 1/2 heaped teaspoon mustard powder (dry mustard)
  • 1/2 level teaspoon ground cloves
  • 1/2 level teaspoon allspice
  • 1 pinch cayene pepper
  • 20 grams Himalayan salt
  • 200 grams raw sugar
  • 1500 grams Ripe tomatoes fresh with skin on and halved

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Sterilize 2 bottles - can be done by putting clean bottles in 100 degree oven.
  1. Place apple, onion and weigh tomatoes into the bowl. Chop Speed 7/15 seconds

    Add vinegar, mustard powder, cloves, Allspice, cayene pepper and salt. Cook 35-45 minutes /Varoma temperature/Speed 3- 3.5/ place basket on top instead of MC (For thicker sauce cook for longer time)

    Add sugar, Puree 1 minute / turn to Speed 5 and allow to get up to speed and then turn slowly to Speed 9/ MC

    Cook another 5-10 minutes /Varoma temperature/ Speed 3-3.5/place basket on top

    Pour into sterilized bottles and seal while hot. Place bottles upside down until cool

    Can store 12 months or more in pantry. When open store in refrigerator

Tip

Slightly longer cooking time will make the sauce thicker.

If you prefer to make a large batch of sauce on the stove top and do preparation in TM, the following is ingredients required:

3 kg tomatoes, 2 large onions, 5 green apples, 11/3 cups white vinegar, 2 tablespoons of salt, 1 heaped teaspoon of mustard powder, 1 teaspoon of cloves, 1 teaspoon of allspice, 1/2 teaspoon of cayene pepper, 680 gm sugar

Puree onion, apple, tomatoes. cook all ingredients except sugar which I add at the end. Takes 31/2 hours approx cooking on low. When sugar is added and heated and disolved. Transfer some at a time into TM bowl and puree 1min and then heat to 100 degrees and pour into bottles.

Cuts preparation time and normal cooking time in half

    Great sauce. I cooked it for 35min (forgot to cook longer as i was multitasking at the time). Turned out quite runny so will do the full 45 next time. Great flavour though!!

    Thanks for the inspiration. I used this as a base to start from and adjusted to suit our family. Instead of sugar I added 130g medjool dates for sweetness, added these with tomatoes before the cooking process. I used 110g apple cider vinegar. For salt I used 4 tsp initially but added 1 more at the end (which would be about 15g). First time I made it I added 20g brown sugar at the end but second time it didn't need it (maybe sweeter tomatoes). Depending on how watery my tomatoes are I increase the cooking time until I get the desired consistency. Spices I stuck with your quantities.

    This is now my go to tomato sauce recipe. Saves so much work no longer standing over a hot pot stirring. Flavours are fantastic and in my last batch I upped the cayene and mustard as family wanted spicier sauce
