If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
1. Cut onions into quarters and if using spring onions cut into 3cm lengths place into TM bowl and grate 4 sec/speed 5.
2. Scrape down sides of bowl using your spatuala add olive oil and balsamic vinegar. Cook for 30min/Varoma/"Counter-clockwise operation" Speed 2 placing simmering basket instead of MC.
3. Scrape down sides of bowl, add 75 grams of sugar and cook for 5 min/Varoma/"Counter-clockwise operation" Speed 2 placing simmering basket instead of MC.
4. Spoon into a container for later use.

Just so yummy. I had an oversupply of onions, so made up four batches of this last night. I ran out of 'normal' balsamic for the last batch and used raspberry infused balsamic...amazing! I reduced the sugar in all batches to 50g but easily could reduce it further. Thank you for such an easy peasy but totally delicious recipe. Christmas hamper must have I think.

Super easy and so delicious. Cooks down to approximately 1.5 to 2 cups. I used all red onions which I thickly sliced as per previous comment and cut back a little on the sugar. Tastes amazing dollopped on hot homemade pizza or accompanied with a good steak. Will definitely try a double mix next time. Warning: open all your windows while cooking!

Hi Larisa, I'm not sure if anyone has answered your question yet, but just in case ... no, all the cooking is done in the TM bowl. The "Varoma" mentioned in the recipe is the cooking temperature. Hope this helps

Just made this and it is divine! Lessened the sugar to 50gm (as others had said) and thickly sliced the onion as I have seen in most restaurants! Now a fave in our kitchen, thanks for sharing!

Delicious and so easy! This has become a staple in our fridge and I've had to promise my Mum that every time I make it, I'll do a batch for her too I mostly use red onion or a mixture and 20-30g coconut/brown sugar. I tried it once without any sugar, but prefer it with at least a little. Have also used flavoured balsamic vinegar, ie lime infused, which gave it another element. Thanks for sharing!
