- 400 grams quinoa
- 130 grams cumquats with skins on and seeds in tact, quartered
- 1 tablespoon chia seeds
- 1100 litres water

place butterfly stirrer into and add the water, quinoa, chia seeds, cumquats and for 1 minutes on speed 2
let this stand for 10 minutes
then cook for 15 minutes on 100 degrees C at on speed 2
The mixture will thicken on standing and if it gets too think while cooking just add water to ensure it stirs. Quinoa cooked this way isn't as fluffy but is perfect for this dish and the cumquats provide a perfect match for my Aromatic Thai Herb Chicken dish.
Great replacement for rice dishes. This will thicken up upon standing so add water as required and fluff up with a fork.
