      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Add Mangoes
  1. With Scales option selected, Cut mangoes in half around stone/seed and twist to separate the halves. Scoop flesh into mixing bowl

    Note the weight of the pulp

    If mango(es) are fiberous, add the stone(s) to the bowl as well after noting weight.
  2. Heat Pulp
  3. Heat Mango pulp, Reverse, Speed 1, 60°C (140°F), 10 mins, this will assist in removing any mango flesh from the stones.
  4. Remove Mango Stones
  5. Carefully remove the mangoe stones
  6. Blend Pulp
  7. BlendClosed lid Fit Measuring cup and blend for 5s, Speed 3. This will break up any fibres in the pulp
  8. Add Sugar
  9. Add Sugar - Aprox 30g per 100g mango pulp.
  10. Add Lime Juice
  11. Add the juice of one lime, you can use lemon if lime isnt available.
  12. Cook
  13. Using Simering Basket instead of MC...
    Speed 1, 95°C (203°F), 20 Minutes.

  14. Add to a Steralized Jar
  15. Pour carefully into a steralized jar, screw on lid and turn upside down to cool.

Tip

Optional - place the cut limes face down in the center of the simering basket, the steam and heat from the cooking process may release additional pecting from the pith which will drip into the mixture (entirely hypothetical).
