PUMPKIN PATTIES
- 500 g pumpkin, CHOPPED ROUGHLY
- 500 g water
- 1 egg
- 1 Self Raising Flour, CUP SIFTED
- 1/4 Plain flour, CUP SIFTED
- dashes Vegetable oli, FOR FRYING
- dash salt
- dash pepper

Recipe's preparation
Place water in TMX bowl
Place pumpkin chopped into simmering basket and cook for 20min, Varoma, spd 2. Make sure when your 20 minutes is up you check that pumpkin is soft, if not you may need to extend your cooking time. Allow pumpkin to cool completely.
Empty water from TMX bowl. No need to clean it.
Once cool place pumpkin into TMX bowl and mix spd 5 until mashed
Add egg, self raising flour, plain flour, salt and pepper into TMX bowl with pumpkin and mix on wooden spoon setting until well combined. If you are in a rush you can mix it on spd 4,it will not affect mixture.
Mixture should appear runny but this will differ depending on pumpkin you use.
Place oil into fry pan and heat. Place tbsp of mixture into oil and fry until lightly golden.
Traditionally my Nonna has always sprinkled them with parmesan cheese but they are lovely plain or with other toppings of your choice.

Tip
Pumpkin is best prepared prior to making the actual patties and allowed to cool completely before mixing with other ingredients.

Thanks for the recipe, it was a very tasty and healthy lunch alternative for bubby and I. We used butternut pumpkin and left out the salt, I believe adding a few extra fresh herbs would have been great too.

Turned out great, I will definitely use this recipe again. I used 475 g butternut pumpkin and it only needed just over a cup of the 50/50 flour mix. Adding Parmesan or honey worked well too. thought I would keep some of the batter for the next day but they were so yummy I cooked up the lot.

This was a flop for me I'm afraid, I used butternut pumpkin. I followed the recipe and it turnend out thick like a scone dough I had to use the dough function to mix it, I then added a little milk to try make it more of a pancake batter. i only cooked a few and they tasted horrible, dough-ey and rubbery. To salvage it I've now thrown the mix in the oven hopefully it will bake like a scone. Lol

Love these! I have been doing them sweet with a tablespoon of honey put in the mix and some cinnamon. Great as a snack and also good as a savoury side on the dinner plate. The only problem is they go too quickly. Its hard to stop at one! haha Thanks so much for putting this on the community.
