- 1500 g sweet potato, peeled & cut into 3cm cubes
- 200 g cream
- 100 g brown sugar
- 200 g marshmallows

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Preheat oven 180 degrees
Place water in the jug. Put the sweet potato in the varoma, dividing it between both layers of the varoma. Place varoma on top of the jug. Steam for 20min / Varoma / speed 1.5. Check that the sweet potato in soft, steam further if necessary. Discard water when done
Place sweet potato, cream & brown sugar in the jug & mix 30sec / speed 4
Line the bottom of a baking dish (25cm x 25cm) with the whole butternut snap cookies, you can break a few into chunks to fill in gaps between cookies
Carefully cover biscuits with sweet potato mixture & smooth over with a spoon. Do this while sweet potato is still warm as it is easier to spread before it is cold
Arrange marshmallows tightly together on top of the sweet potato
Bake for 15min
Serve as a side dish with roast meat & veg. Goes particularly well with roast leg of lamb
