Zuchini Fritters

Zucchini Fritters

  • 200 grams zucchini, deseeded
  • 10 grams grated parmasan
  • 110 grams plain flour
  • 110 grams Self Raising Flour
  • 1 tbsp parsley or basil, chopped
  • 2 eggs
  • 170 grams Milk
  • salt and pepper to taste

Recipe's preparation

    Method:
  1. Roughly chop the zucchini and add to TM bowl. Grate for 4-5 seconds on speed 5. Set aside. No need to clean the bowl.

  2. Add the remaining ingredients to the TM bowl and mix for 20 seconds on speed 4. Scrape down bowl.

  3. Add back the zucchini to TM bowl and mix for 20 seconds on speed 3 Counter-clockwise operation.

  4. The mixture should be quite thick and not too runny but wet enough that it's not a dough. If needed add a dash more of milk and mix again on Counter-clockwise operation for a few seconds.

  5. Heat enough vegetable oil in a frying pan to shallow fry. Once oil is hot add 1 tbsp of mixture at a time to form fritters. 

  6. Once  you have a nice golden colour turn over and cook the other side. The fritters will start to puff up once turned. 

    Set aside on some paper towels to remove some oil.

  7. Serve hot or cold with extra grated cheese on top (optional). Enjoy!
