  • 1 --- Large clove, Garlic
  • 2 spring onions, White only
  • 1 Small brown onion, Quartered
  • 30 Grams butter cubed
  • 2 Heaped teaspoons TMX veggie stock
  • 600 Grams boiled water
  • 300-350 Grams cauliflower, Small pieces
  • 350 Grams potato 2cm chunks
  • 150-200 Grams, Diced bacon

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Add garlic, spring onion and onion to bowl chop, 5 seconds speed 7.

    add butter and bacon, sauté 4mins varoma speed1 mc off.

    Add cauliflower and potato, stock, boiling water. 17mins 100 degrees speed 1.

    puree over 90 seconds from speed 1-7.

    serve with a crack of pepper and salt to taste.

Tip

Reduce the carb load, halve the potato and increase cauliflower by 150grams.

    Delicious soup. I wanted to use up old limp veggies, and left overs in the fridge, so I used very old limp cauliflower, 1 small potato, 1 cup of 2 day old mashed sweet potato, and a piece of steamed pumpkin, 1 brocolli stem. Served with crunchy bacon rind, and crumpets. Hearty and warm perfect for winter!

    Very yummy soup so creamy I just used brown onion as I didn’t have any other type And I swapped half potato for more cauliflower and added 50g of Parmesan cheese when blending. Will definitely make again

    It was an amazing soup, very hearty and creamy. I will definitely drop the amount of stock as others have suggested next time as I also found it too salty. I think 1tbls would be enough and will try this next time. We did use the lower amount of potato, more cauliflower - delish!! Thanks

    If your bacon is lower quality/ crovac'd or just really salty, go easy on the stock. same if your stock has a strong garlic taste, use a smaller clove in the soup

    Soup in less than half an hour! Very tasty, but I was heavy handed on the heaped teaspoon of stock which made it a bit salty. Topped with parmesan and pepper to balance it all out. Thanks for the yummy, easy recipe.

    Very nice soup, quite filling and a bit rich from the bacon mabie. Next time i will use more cauli as i dont like that  starchy mouthfeel from the potatos.

    Also serve mine with cracked pepper and parmasin cheese. So good.  Big Smile

    Served this for a small dinner party. Everybody loved it. So tasty. Was a little too salty for me most likely due to my overally salty homemade stock. Did not add any flour and it still ended up lovely and thick.

    Thank-you Sarah! A great combination, the bacon gives this soup that hearty yum taste. I used half a zucchini and a sweet potato in it and the cauilflower was still the star. Recommend this recipe for a quick tasty meal.  tmrc_emoticons.;)
