Ingredients

Dezi's Greek Lentil Soup

  • 1 onion, peeled and halved
  • 2 garlic cloves
  • quarter red capsicum, chopped
  • 2 carrots, Peeled and chopped
  • 1 celery stalk, chopped
  • 1 tomato, halved
  • 2 potatoes, peeled and halved
  • 1 zucchini, chopped
  • 5 sprig parsley
  • 30 g olive oil
  • 65 g dried brown lentils, rinsed
  • 1/4 tsp paprika
  • 1 tablespoons Vegetable stock paste
  • 2 bay leaves
  • 1 litres water
  • 1 dash red wine vinegar

Recipe's preparation

  1. Add olive oil.
  2. Add garlic, onion, red capsicum, carrots, celery, tomato, potatoes, zucchini and parsley.
  3. Chop 3 seconds, speed 5.
  4. Saute 5 minutes, 100 degrees, stirring speed.
  5. Add dried lentils, paprika, vegetable stock paste, bay leaves and water (to fill to maximum volume line)
  6. Cook for 30 minutes at 100 degrees at stirring speed.
  7. When finished, remove bay leaves, season with salt and pepper and add a splash or red wine vinegar.

Tip

This recipe is Dezi's go-to Greek Lentil Soup (fa-ki) when the kids are sick.
She uses white wine vinegar, I use red.
Feel free to add/use whatever veggies you have on hand.
If using a TM5 or TM6, please place simmering basket on lid when cooking above 100 degrees Celcius

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
