Thai Chicken Cauliflower soup

Ingredients

Thai Chicken Cauliflower soup

  • 200 gram cauliflower florets
  • 2 brown onion
  • 3 garlic cloves
  • 1 tablespoon coconut oil
  • 55g mushrooms, finely sliced
  • 140 gram capsicum red, finely diced (a few extra fine strips for serving)
  • 500 grams chicken breast skin removed, 2-3cm chunks
  • 1 tablespoon finely chopped ginger
  • 1 tsp finely chopped kaffir lime leaves
  • 1/2 tsp sambal oelek
  • 1 tablespoon corriander stalks finely chooped, extra for serving
  • 3 cups --- chicken bone broth or chicken stock, or can use 1 tbsp edc veg stock paste with 3 cups of water
  • 1 tablespoon rapadura or panella
  • 160 gram coconut milk
  • 2 - 4 tablespoon Maggi fish sauce, see tip notes
  • 1 - 2 tablespoon fresh lime juice, see tip notes

Recipe's preparation

  1. 1. add cauliflower to TM. Chop Sp5 5secs, or until resembles rice. Set aside

     

    2. add onion and garlic chop sp5 5secs. Scrape sides. Add coconut oil. Cook 4mins 100degrees Gentle stir setting

     

    3. add mushrooms, capsicum, ginger, sambal oelek, kaffir leaves. Cook 2mins 100 degrees Gentle stir setting

     

    4. add chicken, corriander stalks,rapadura, chicken broth (or chicken stock or veg stock and water). Cook 16mins 100degrees Gentle stir setting

     

    5. add coconut milk, reserved cauliflower, fish sauce and lime (see tip). Cook 2mins 100degrees Gentle stir setting

     

    6. pour unitl bowl and serve with the extra corriander and capsicum

Tip

1. if using bigger chunkc of chicken you may need to increase cooking time just check after the 16mins and increase by 2mins if not cook.

2. start by using 2 tablespoons of the fish sauce and 1 tablespoon of lime juice and increase if needed. I like mine quite tangy so the full amount is perfect for me and my family but may be a bit to strong for others.

    Yummy soup! Thank you. I didn't have lime leaves so added Thai basil instead. It was delicious but I will make it again with the lime leaves!
