  • 80 g dried apricots
  • 40 g sultanas
  • 40 g Orange (or apple) juice
  • 250 g Light Philly Cream Cheese

Recipe's preparation

  1. Chop almonds for 5 secs on speed 8, then set aside.

  2. Chop apricots for 5 secs on speed 6.

  3. Add sultanas and juice, cream cheese and 1/3 of the almonds.

  4. Mix for 10-15 secs on reverse, speed 3.

  5. Spread remaining almonds onto paper and pour mixture on top. Using the paper, roll the mixture into a log (or whatever shape you like) coating it with the almonds.

  6. Refrigerate for several hours before serving.

Tip

This is a great accompaniment to biscuits and dip.

It also works well with full-fat cream cheese if you're not concerned about the extra calories.
